Lab Report: Pearl [Bitters for Oysters]
Purpose: To replace the mignonette and/or hot sauce topping for a raw oyster.
Outline: Approximately ten drops (drops, not droppers) are placed upon each oyster, with or without a lemon squeeze. In a cocktail, try 1.5mL-3.75mL (2-5 droppers), varying based on other ingredients and total drink size. Each dropper has mL increments listed on it for accuracy and precision with every cocktail.
Experiment: This flavor has been tested with Bloody Marys, micheladas, the negroni, and gin & tonics.
Observations: Pearl adds a fresh, crisp, spicy complexity to all raw oysters, to all drinks listed under experiment, and to many more untested.
Data: Pearl is a blend of Riskin’s Banshee [Salted], Dragon [Spicy Chile], Gator’s Lair [Celery], and Snakebite [Horseradish] bitters. It is a 50% abv solution of water, alcohol, fresh celery and celery seed, four types of chile peppers, ground ginger, ginger root, horseradish root, two unprocessed sea salts, lime peel, lemongrass, bay leaf, tamari (water, soya, salt), and activated charcoal. Sample and full size bottles are available. The full size bottles will last 25-60 cocktails.
